Troubleshooting Your Sourdough Bread
This module uses scenario-based learning to reinforce the basic principles of sourdough baking. The learner plays the role of a baker who is troubleshooting three common problems that occur in sourdough bread. For each sourdough baking problem, the learner makes adjustments to a series of factors and sees the consequences of those choices. If the learner makes the correct adjustment, he/she is rewarded with a beautiful loaf of bread. After making each choice, the learner receives detailed formative feedback that reinforces a correct choice or clarifies an incorrect choice. This formative feedback also highlights the baking science behind each choice, providing another opportunity for transfer of knowledge.
Before the learner makes a decision on each adjustment, he/she can use a slider to see the effect the adjustment has on qualities of the dough. The information revealed from the slider provides a small hint that helps the learner activate previous knowledge before making a decision. These sliders not only provide hints to help the learner decide on the adjustment, they also provide another way for the learner to engage actively with the content.
